Greek Salmon with Raw Tzatziki

I am currently at my desk, munching on stale sunflower seeds until lunch time. I'm pretty hungry today. Looking at pictures of dinner last night only makes me more hungry. I decided to try my hand at Greek food. I'm not exactly sure how I got the idea in my head-oh wait I just remember actually! I was at the grocery store and picked up some pre-made tzatziki sauce and it was total crap, low-fat yogurt and canola oil. I decided that it would be cheaper, healthier and tastier if I just made my own. Then I decided I'd pair it with fish. So first, I put my favorite side, lima beans on the stove since they take a little while to cook. Then, I seasoned my salmon with salt and pepper, garlic, olive oil and topped it with sliced lemons. I put this in the oven at 350, eventually upping it to 400.
While the salmon was cooking, I whipped out my mini food processor. I love this thing. For the tzatziki I used:
-raw yogurt
-fresh dill
-1 clove of garlic (I used a large clove, so delicious and spicy)
-a little lemon juice
-about half a cucumber

When the salmon was done I topped the sauce with it and served up a bowl of the buttery lima beans. The salmon tasted SO fresh and was just full of flavor. The creamy, super buttery lima beans, as always were such a nice accompaniment and a great source of fat. And since I used raw yogurt to make the sauce, I got a healthy dose of probiotics to keep my gut flora in check.

  1. Delicious!! We adore salmon at this house, so I'm always looking for more ways to prepare it. I'm thinking, "How can you go wrong with tzatziki?!" Lovely for spring/summer far as well! Thanks for sharing!!
