honey mustard salmon!

First things first, I had this for breakfast yesterday morning:


 
French toast! I also had eggs, but the French toast was way more exciting. And awesome. I used the maple syrup we got from the farm and it was freaking delicious.


My tooth is killing me! I woke up at 12:45 last night in pain. The pain was radiating through my head. It started at my tooth, went up into my cheek bone, throbbed in my temple, seared through the back of my head and ended on the left side of my  neck. There was no way I could sleep without more advil. I searched my house, asked the roommates and after determining there wasn't any in the house, I got dressed to make a late night run to 7-11. Thankfully, Kait was gearing up going to 7-11 for snacks! So she picked me up some. She also shared her mac and cheese (yeah, the Velveeta kind that is terrible for you) with me. I was so comfortable when I finally passed back out. Unfortunately I was tired as ballz this morning, and in more pain. Advil is no longer doing much. I called the dentist and at this point am waiting for the O.K. from my boss to switch my appointment from Wednesday, to tomorrow at 10am. I'm not stoked to have my tooth extracted, but I'm way more excited than any normal person should be about the removal of a mercury filling. I keep thinking things like, "Dude, this will improve my immune system so much!!" and "I'm going to use chlorella to get rid of all this effin mercury in my system and it's gonna be awesome!"

As for dinner, I made some honey mustard salmon. I used equal parts raw honey and mustard (I used the cheapy mustard, would def have been better with a dijon or something). I baked it in the over at 400 degrees and served it with a little salad, also dressed in honey mustard.

Ignore where I gouged out the center to check if it was cooked through. Normally I'm not a fan of the sweet and savory dishes, but this was well balanced and not too sweet. It worked out really well, and was a nourishing dinner. I sort of don't feel like cooking tonight. I might hit up Elevation Burger or Chipotle...

crossfit/artichokes/chicken and veggies/avocado salad

I really want to get into exercising more. I think I'm going to start doing CrossFit, you can read about it here if you're not familiar. Since it's in a group setting and I'll actually have to pay for it, I think it will definitely motivate me. From what I understand, a group of people go through a series of workouts. They all do the same workouts, but they are tailored to fit each person for their level. For example, if the workout we're supposed to do is squats, clearly I'll be squatting a lot less than the body builder next to me, or maybe more, depending on who I'll be working out with (though this is highly unlikely). I appreciate that it's a group setting and I'll have to get through a workout with people. Even though I know my first couple times doing this will probably be really intimidating.

As for dinner last night, I made an artichoke with hollandaise sauce!!!! All by myself!! I don't know why it seemed so daunting. Since I no longer have a steamer, I just boiled the artichoke while I cooked my other food. As for the other food, it was pretty awesome also:


-butter
-green pepper
-onion
-chicken
-spaghetti sauce
-garlic
-cayenne
-cheeses of choice (I used raw cheddar and pecorino)

Basically just sautee the veggies and chicken with garlic and cayenne, add the spaghetti sauce and let it simmer for a bit before topping it with cheese.


As for the hollandaise, I really didn't follow a recipe. I winged it, and it was awesome.
-4 T butter
-1 egg yolk
-clove of garlic
-a little fresh squeezed lemon juice

I separated the yolk and put it in a bowl. I melted the butter with a whole clove of garlic, for extra flavor. In small increments, I added the butter, stirring rapidly each time.


And for a salad of sorts:
-1 avocado
-cilantro
-lemon juice
-grape tomatoes


All together:


That artichoke was effing awesome. The center was sweet and went perfectly with my hollandaise sauce. Alright, I'm off to continue work. There are no windows in my office!! This genuinely makes me so sad. Hope you all have a great day!

Gluten Free Clams Linguine

Who doesn't love clams lunguine?! Weirdos. That's who. I love seafood. And I love pasta. Pairing them together is a no brainer. As I've said before, I don't eat a lot of pasta, as I am not fond of grains (okay I am fond of them, my digestive system and overall health isn't, neither is yours). But I had some clams and a little bit of rice pasta that were just calling to me the other night. This is a pretty snazzy dish, I'd serve it for special occasions.

Ingredients:
-tinkyada brown rice pasta
-butter (duh)
-garlic
-tomatoes
-cheese of choice (usually parm)
-clams
Boil the pasta. Saute a ton of garlic and a decent amount of tomatoes in a lot of butter. Remember, do not feel guilt about this! Butter is good for you! It has a lot of vitamin A, which actually protects your heart. Add the clams, and their juice. You want all the juice to help form a sauce. You can add wine or lemon juice, but I found I was happy with the acidity from the tomaters. When the pasta is done cooking, grab it with tongs and add it to the pan with the goods. The bit of starchy water that the pasta is coated in will help thicken your sauce. Finally, top with cheese of your choice.

I bought the clams at Yes! Organic Market. Considering they were canned and not that expensive, they were really good and decently sized. Check out this whole clam:


 This was such a simple recipe. It was light, but delicious and rich enough from the butter. It absolutely rivaled the clams linguine I've had in restaurants.
I just wish I has parsley to add.

On another note, I'm so happy it's Friday! The stove is finally fixed, thankfully. I have made several one pot meals in the rice cooker. Have you ever tried to boil eggs in a rice cooker? Don't. But today for breakfast I had a large glass of raw milk, a tablespoon or so of coconut butter, and now I'm eating scrambled eggs and bacon (pastured, uncured). Since I was unaware that the stove was working last night I made a bunch of chili in the rice cooker, which I'll be enjoying for lunch also.

Healthy/Low Key V-Day

When I first started dating Mike I told him I thought Valentine's Day was kinda lame and we didn't need to celebrate. Which was true...but as the years went on, I started to want to celebrate. While I do think it's unnecessary to buy each other gifts (though if that's your thing, awesome) I do think it's great to celebrate your relationship. We didn't really celebrate our relationship on the 14th, but we did make a really tasty dinner.
If you don't have the hook up at a local farm, I suggest you get the hook up. We ordered filet mignon from ours and it was da bomb. Like. Really. I didn't eat steak for like 6 years. I would never order a steak at a restaurant that wasn't organic/grass-fed. But I have no qualms ordering it from my farmer. I like how I say "my farmer" like I own him.
Anyway! For school I've done a lot of reading on food combining. I won't get into the specifics right now, but basically the idea is that food digest differently in your stomach, and they bring about different digestive enzymes. If I'm losing you, keep reading, it's not that hard. So when you combine certain foods (like starches and protein, fruit and bread, potatoes and steak, etc) that don't go together, they don't digest properly. So instead of the tradition steak and potato dinner, we had filet mignon, asparagus and cauliflower gratin. Served with salad. For the cauliflower gratin I just combined raw cheese, raw butter, garlic, sauteed onions and chicken broth. Pour over cauliflower and cover with foil, put in 450 degree over for 30 mins.
Wam, bam, boom:
Please try to eat a salad as much as possible. You need the digestive enzymes, people!
So V-day was just a nice dinner at home. I really enjoyed it. Though I can't stress enough, if you are going to eat meat, please make sure it's organic and grass-fed. Animals aren't meant to be grown in corporate owned factories. They're meant to be happy and have the ability to chill out and eat some grass! Majority of meat in the grocery store is corn and soy fed, which makes it toxic to your body. If you're buying meat in grocery stores, your supporting that system. Buy some meat from a local farmer. If you aren't familiar with one, GOOGLE!

Healthy Meatloaf and Super Bowl Eats

One meal Mike makes a lot is meatloaf. It's really easy to make a giant batch and eat it throughout the week with a salad. Which is what we did for dinner last night. Most meatloaf is full of ketchup (high fructose corn syrup? no thanks) and refined bread (sometimes we don't even add bread, but last night he used spelt). When I make it I usually add tomatoes and/or tomato sauce. Mike's was pretty good though:
It didn't come out like this. He removed it from the baking dish and stacked it so he could measure, this was after we already loaded some onto our plates.

We recently signed up for accounts on livestrong.com so I just copied and pasted his recipe from there. It's an amazing site and I'll talk more about it in the future. Bake this uncovered on 350 for 40 minutes.

I am so stoked for the super bowl! I actually don't care that much about football, especially if the Redskins aren't playing.
Gotta rep the Skins.
But I like that my roommates and I all gather in the living room and watch Mike's giant projector that projects onto our wall. I like that we have a bunch of friends coming over and some of them are bringing food while I also get to make food for them. I like that we're gonna have a few brews (or probably wine in my case) and it's going to be super fun. On my menu:
garlic hummus and pita
smoked mozzarella pasta salad
5 layer bean dip ("refried" beans, guac, sour cream, pico de gallo and raw pepper jack)
french bread with brie and honey
and maybe brownies topped with marshmallows

I know it's not very raw dominant or healthy, but it's food we can all enjoy and I like to eat this way sometimes. At least it'll all be organic. It's nice to indulge.  Recipes and pics to follow.
