honey mustard salmon!

First things first, I had this for breakfast yesterday morning:


 
French toast! I also had eggs, but the French toast was way more exciting. And awesome. I used the maple syrup we got from the farm and it was freaking delicious.


My tooth is killing me! I woke up at 12:45 last night in pain. The pain was radiating through my head. It started at my tooth, went up into my cheek bone, throbbed in my temple, seared through the back of my head and ended on the left side of my  neck. There was no way I could sleep without more advil. I searched my house, asked the roommates and after determining there wasn't any in the house, I got dressed to make a late night run to 7-11. Thankfully, Kait was gearing up going to 7-11 for snacks! So she picked me up some. She also shared her mac and cheese (yeah, the Velveeta kind that is terrible for you) with me. I was so comfortable when I finally passed back out. Unfortunately I was tired as ballz this morning, and in more pain. Advil is no longer doing much. I called the dentist and at this point am waiting for the O.K. from my boss to switch my appointment from Wednesday, to tomorrow at 10am. I'm not stoked to have my tooth extracted, but I'm way more excited than any normal person should be about the removal of a mercury filling. I keep thinking things like, "Dude, this will improve my immune system so much!!" and "I'm going to use chlorella to get rid of all this effin mercury in my system and it's gonna be awesome!"

As for dinner, I made some honey mustard salmon. I used equal parts raw honey and mustard (I used the cheapy mustard, would def have been better with a dijon or something). I baked it in the over at 400 degrees and served it with a little salad, also dressed in honey mustard.


Limas!



Ignore where I gouged out the center to check if it was cooked through. Normally I'm not a fan of the sweet and savory dishes, but this was well balanced and not too sweet. It worked out really well, and was a nourishing dinner. I sort of don't feel like cooking tonight. I might hit up Elevation Burger or Chipotle...

Quick Lunch Idea

This morning I was in a huge rush. I only had a half hour to down some kefir (I've been managing the candida [overgrowth of yeast in the gut] issues pretty well, but I don't know what's up, it's back with full force), make breakfast and lunch, down some raw milk, fill two water bottles and be on my way. I always try to eat fermented foods (kefir, lacto fermented salsa, yogurt) as well as raw milk. The good bacteria in these kills the bad bacteria, and helps regulate candida issues. As I've said before, it's estimated that 80% of the population have candida, especially if you eat a typical diet. Hell, even I have it. Limiting grains, processed foods and sugar is necessary, not only for candida but for imptimum health.

Anyway, I hard boiled three eggs for breakfast. Nothing fancy but it gets the job done. I chopped up half a red pepper, half an onion and a roma tomato and sauteed in butter. I threw a piece of salmon in a pot of hot water and turned it on to boil. I added organic marinara to the satueed veggies and put them in BPA free tupperware. I topped with grated raw cheese and when the salmon was poached through, threw that on top of the veggies.
So breakfast and lunch came together within 30 minutes. It was very filling, there were a ton of vegetables under the salmon.

It's funny, when people eat complete junk, even if they eat a lot of it, they're often hungry soon after. This is because your body isn't getting enough nutrients from the food. Sure, I only had three eggs and salmon with buttered veggies and cheese so far today, but I haven't been hungry. I haven't craved other food (including carbs and sugar). I am satiated!

So I just thought I'd share with you an easy meal to throw together. This can easily be done with chicken, or other veggies. It's filling and quick to make when you're in a rush.

Salmon with Green Beans and Taters plus Religion

Today I'm supposed to discuss my views on religion. I always say that it's not polite to discuss religion or politics, mostly because people end up screaming at each other (sometimes...myself included). So I'll try to just keep this short and sweet. I went to Catholic school for twelve years. The way I was taught and treated grades k-8 definitely left something to be desired. The school made religion something to be feared for me. While a lot of people think of religion as their home, or consider some sort of comforting embrace, I have the exact opposite feelings. I always believed in God, but not the same God Catholics believe in. A loving, all forgiving God. Now I'm not really sure what I believe in. It's hard for me to get past my logic these days. While I think religion can be a great thing, I also think it can be one of the worst things ever created. Anything that can make people fight and kill, can make people turn against each other because of their sexual preference, is not something good in my eyes. And I wonder how many people have actually read the bible. I have. It's not some loving, happy book. It at times is violent, and brutal. I do want to believe in something, but I absolutely do not agree with organized religion.
Salmon:

  • parsley
  • lemon juice
  • butter
Green Beans:

  • butter (though preferably lard)
  • onions sauteed in butter or lard
Taters:

  • boiled in chicken broth, just covering the potatoes, until it simmers out

Of course I put some rooster sauce on the side, which turned out to be unnecessary.

Mexican Salmon

I LOVE Mexican food! The flavors are so bold and it's so fresh. The other night, I was seriously cravin' some Mexican food. We were sort of low on groceries but had salmon. Thus, Mexican salmon was born. This was definitely one of my best recipes, especially for salmon, which can get kind of bland if you eat it often (which you should, because it's great for you).
Ingredients:
  • onion
  • raw butter
  • garlic
  • tomato (fresh and/or canned)
  • cilantro
  • peppers
I sauteed the onions, fresh tomato and garlic in butter until translucent. I had canned whole tomatoes, so I pulsed them in the vitamix with cilantro. Add this and the peppers and let the sauce thicken a bit. I then added the salmon straight into the mixture and cooked until done. Even Mike agreed it was one of my better recipes, and that man is picky!
I really cannot emphasize how good this was. Not to toot my own horn. I added some guac on the side.
 Served with my delicious, beloved lima beans:
 One of my all-time favorite dinners. Full of healthy fat and veggies.
